Quick 4-Ingredient Enchilada Casserole
Enchiladas without the fuss! This Quick 4-Ingredient Enchilada Casserole is sure to become a favorite in your house! Skip rolling tortillas, instead create layers of corn tortillas, refried black beans, enchilada sauce and creamy Mexican cheeses.
Vegetarian Quick 4-Ingredient Enchilada Casserole
Another thing to love… this is a meatless main dish. If you’re like me, you try to include some vegetarian options in your weekly rotation that your family will be happy with and they will be happy with this one!
Full disclosure: I make my own homemade refried beans and enchilada sauce. I can’t begin to tell you how much better they are than what you would buy in a can! So, if you have the time, you have to try my recipes for both. It will add about 20 minutes to your prep time.

The Staples:
Refried Beans
First of all, I use my Easy Refried Black Beans recipe in this casserole, you can find it here. It’s super simple and really good! I can vouch for the results using my recipe and highly recommend it! However, if you’re short on time canned refried beans are fine. The quality of refried beans you use will have a huge effect on your end result. I like Amy’s Refried Black Beans. Enchilada Sauce
The same goes for enchilada sauce… I have a recipe. You can find it here. It is amazing! If you’ve never made your own enchilada sauce you have to try it! You won’t be disappointed, I promise! It has a rich taste due to the browning of the taco seasoning/flour mixture that you just don’t get out of a can. But once again, if you’re short on time you can use canned.
Tip: If I know I’ll be making a few Mexican dishes during the week I’ll make a batch on Sunday to shorten my prep time on a week night.
Corn Tortillas
Finally, it’s important that you use corn tortillas when making enchiladas. They have a slightly sweet taste and rougher texture than flour tortillas which gives you a much more authentic enchilada experience.
Cheese
One more thing, a good Mexican blend or Cheddar/Jack is what I like to use. Pre-grated Mexican blends are pretty easy to find in most grocery stores. Monterey Jack is also delicious.

The process to make Quick 4-Ingredient Enchilada Casserole:
Spread sauce into bottom of casserole dish and lay 6 tortillas over sauce.
Spread refried beans on top of tortillas.
Quick 4-Ingredient Enchilada Casserole
Equipment
- 9×13 Inch Baking Dish
Ingredients
- 12 Corn Tortillas 5 inch
- 4 cups Refried Black Beans or 2 cans
- 1 1/4 cup Red Enchilada Sauce, Homemade or 10 oz. can
- 2 cups Mexican Cheese Blend, shredded
Instructions
- Spread about 1/2 cup enchilada sauce into 9×13 baking dish.
- Lay 6 tortillas on top of sauce.
- Spread refried beans evenly over tortillas.
- Top with 6 more tortillas.
- Pour remaining enchilada sauce over tortillas.
- Top with cheese and cover with foil.
- Bake at 350 degrees F for 20 minutes. Remove foil & bake another 5 minutes to brown cheese a bit.
