Black Bean Soup Recipe

Black beans, chicken and green chilies in a savory garlic and cumin infused broth…waiting for you when you come home! The 10 minutes you’ll spend in the morning on this slow cooker recipe will be SOOO worth it! This Black Bean Soup recipe is the best and easiest I’ve tried. By the way, if you like Panera’s you’ll love this!

My family loves this Black Bean Soup recipe! It’s a little spicy and incredibly tasty! (adjust to suit your tastes) Therefore, this is one of our favorites, especially on cold days, although we like it anytime. Also, tortilla chips and shredded cheddar or jack cheese are a great way to top it off.

 I like to pair this with my Corn Salad or a tossed salad.

Soup for lunch…

Like many recipes with onions, garlic and other savory seasonings they only get better with age, which makes this fantastic the next day for lunch! Oh, and another thing, a good thermos will keep your Black Bean Soup nice and hot until lunchtime. My kids have taken this to school on many occasions. Black Bean Soup Recipe Ingredients:

Chicken

Here’s the best thing, you can use whole skinless, boneless chicken breasts, there’s no need to slice them since they will be cooking all day…they will be so tender that you can easily pull them apart with a fork. So, go ahead and toss the whole chicken breast into the pot.

Should I use frozen chicken breast in a slow cooker recipe?

I’ve seen this debate on the internet a lot. In my opinion, it’s safest to have chicken completely thawed out before you add it to the slow cooker. This is why… when you add frozen meat to a slow cooker it reduces the temperature in the entire pot which increases the likelihood of bacteria growth, (especially if your pot is set on the low setting) and if you’ve ever had food poisoning…it is not worth the risk!!!

Here’s what I do instead, if I decide to make a recipe last minute and my chicken is frozen, I just pop it in the microwave on the defrost setting while I combine the rest of the ingredients for the recipe. Then I add the thawed (or almost thawed) chicken to my recipe.

Black Beans used in Black Bean soup recipe…

Obviously, I used canned, already cooked black beans in my Black Bean soup recipe due to the fact that they’re quick and easy, and try to find low sodium if you can since you’ll already be adding salt to the soup.

Chicken Broth

I use Aldi’s Simply Nature Organic Chicken Broth, it’s really good and whenever possible buy the lower sodium, just to keep it a bit healthier. If you don’t have an Aldi in your area…I suggest trying to find another organic brand, the taste is much better than the non-organic.

Green Chilies

Are green chilies and Jalapenos the same?

Yes and no, technically, all green peppers that are considered hot are part of the green chili group. However, most chilies used to make canned green chilies, come from the larger, milder Anaheim pepper. They are not really spicy like a Jalapeno but add lots of flavor to any recipe. If you like to make Mexican food…they should be a staple in your pantry.

Onions

Why use Vidalia onions? I use Vidalias for almost everything… they’re sweet, delicious and they don’t make me cry!

Cloves

Don’t leave the cloves out! They add an extra layer of unique spiciness. Ground cloves are fine.

Black Bean Soup

Serves 8, Prep Time: 10 minutes, Cook Time: 8 Hours

2 cans black beans (16 oz. each) rinsed & drained

2 chicken breasts, skinless & boneless

2    4- ounce cans green chilies, chopped

1 large onion diced

2 cloves garlic minced

6 cups chicken broth

2 tsp. sea salt

2 tsp. cumin

1 ½ tsp. dried oregano

¼ tsp. cloves, ground fine

1/8 tsp. cayenne pepper

Instructions:

Combine all ingredients in 6-quart slow cooker, stir well.

Cook on low for 8 hours or until chicken is tender and pulls apart easily.

Serve with tortilla chips and top with shredded cheese and green onions if desired.
