I love cabbage rolls with a tasty beef and rice filling basted in a rich red sauce rolled into neat little bundles. Have you ever made them? If you have, you already know that they’re quite time consuming and if you’re like me, you don’t want to spend all night cooking!

These little shortcuts are completely optional, but they can be great time savers if you know you’ll be short on time. Or you just hate doing that stuff. 🙂

How do you roll cabbage rolls?

Who knows? Just kidding, some people do it quite well but for those of us who run a little short on patience or time or both?                                                                                        The solution is to make a casserole instead using bagged cole-slaw mix. Don’t worry, the results are amazing, the flavors are the same only it’s much easier to make! I love that!

Is it necessary to cook rice before adding it to a casserole?

That depends on the type of casserole you’re making.

For example, in this recipe we’ll be adding rice to the ground beef mixture along with water and tomatoes and then simmering for 15 minutes on the stovetop. Therefore, the rice will be cooked when we add it to the casserole before it goes into the oven to bake.

Exceptions…

However, in some recipes especially those that contain a lot of liquid the rice can be added uncooked and it will cook inside of the casserole as it bakes in the oven. The time in the oven will need to be around 1 hour for the rice to cook completely. By the way, make sure to use regular white rice that cooks in fifteen minutes. Rice that requires a longer cook time such as brown rice or red rice should be cooked before adding to a casserole that will bake in the oven.

Ingredients
  

  • 16 oz. bag cole-slaw mix (shredded)
  • 1 lb. ground beef
  • ½ cup onion finely chopped
  • ¼- ½ tsp. salt
  • ¼ tsp pepper
  • 1 ½ cups chopped tomatoes canned or boxed
  • ½ cup uncooked white rice
  • ½ cup water
  • 1 tsp Worcestershire
  • 2 cups shredded Cheddar cheese
  • 16 oz. tomato sauce

Instructions
 

  • Sauté beef and onions in a large skillet until beef is browned. Drain excess grease.
  • Add salt, pepper, tomatoes, rice, water & Worcestershire sauce. Stir well.
    Cover & simmer for 15 minutes or until rice is cooked.
  • Lightly oil a 10×10 casserole dish. Spread shredded cabbage into bottom of dish, using about 2/3 of the bag.
    Pour 1 cup of tomato sauce over cabbage.
    Spoon rice mixture over cabbage.
    Cover with remaining cup of tomato sauce.
  • Cover & bake at 350 degrees for 30 minutes.
    Remove from oven and top with shredded cheese. Return to oven until cheese is melted (about 5 minutes).
