Super Easy Pantry Recipes:
Pasta with Pesto Sauce
Cook any type of pasta and toss with jarred pesto. If you have black olives and roasted peppers, they’re a great addition.
Enchiladas with Beans
Heat enchilada size corn tortillas. Spoon a layer of enchilada sauce into a 9×13 baking dish. Stir a small can of green chilies into a can of refried beans. Spoon onto each tortilla. Roll and place in pan seam side down. Cover with remaining enchilada sauce. Sprinkle with cheese. Cover and bake for 20 minutes.
Tuna burgers
Drain 3 cans of tuna. Add ½ cup breadcrumbs, 3 tbsp. mayo, egg, diced celery and onions. Form into patties and brown on each side.
Bean Burritos
Fill large flour burrito shells with black beans mixed with seasoned rice (taco seasoning is great). Top with cheese, lettuce, tomato, or other desired toppings you have on hand.
Lentil Soup
Combine 2 cups of lentils, one of each: diced onion, carrot and celery. Mince 3 cloves of garlic. Add 2 quarts of chicken or vegetable broth. Season to taste with salt, pepper and cumin. Simmer for 30 minutes.
Rice Pizza
Spread cooked saffron rice into greased baking sheet to form a crust. Spread tomato sauce on top. Next, top with favorite pizza toppings. I like to keep black olives and bacon pieces in the pantry for this recipe.
Bean Burgers
You can find my Black Bean Burgers recipe here. Jarred salsa, black beans and breadcrumbs are staples you’ll need for this one.
Chili
Meatless chili is delicious! Combine 2 cans of chili beans, 1 can black beans, medium diced onion, 3 cloves minced garlic, 1 can diced tomatoes, 1 can tomato sauce, 1 cup broth, 3 tsp. cumin, 2 tsp. oregano, 2 tbsp. chili powder & 1/2 tsp, salt. Simmer in slow cooker for 4 hours.
Chicken & Rice
Add a can of chicken to cooked rice. If you have Cream of Chicken soup it adds creaminess. Toss in your favorite vegetables.
Tuna Casserole
Combine 4 cups cooked egg noodles, 2 cans tuna, 1 can Cream of Celery soup, 1 cup Cheddar Cheese and ¾ cup milk. (If you don’t have cheese and milk, it’s still good.)
Salmon Loaf
Combine 1 can salmon, ½ cup saltine cracker crumbs, ½ cup milk and 1 egg. Mix and press into greased loaf pan. Bake at 350 for 40 minutes.
Black Bean Salad
Mix a can of black beans with a can of mexicorn. Serve with chips and salsa.
