Ingredients

  • 15 oz. can Black beans rinsed & drained
  • 2 eggs room temperature
  • 4 Tbsp. coconut oil melted
  • ¾ cup cocoa powder
  • ¼ tsp. salt
  • 1 tsp. vanilla extract
  • ½ cup sugar
  • 1 ½ tsp. baking powder
  • 3 Tbsp. water
  • 1/3 cup semi-sweet chocolate chips mini

Instructions

  • Combine all ingredients except chocolate chips in a blender or food processor.
  • Gluten Free Chocolate Brownie Ingredients in my Ninja Blender
  • Pulse for about 3 minutes, stopping a few times to scrape with a spatula. The mixture should be smooth like a boxed brownie mix consistency. If it’s too dry add a little bit of water 1 tsp. at a time.
  • Pour into lightly greased (I use coconut oil) standard sized muffin pan.
  • Top with chocolate chips.
  • Bake in pre-heated oven at 350 degrees for 20 minutes or until a toothpick comes out almost clean. (They can get dry if over-baked.)
  • Let cool for about 10 minutes before removing brownies from pan.
