Amazing Slow Cooker Beef Stroganoff
15 minutes prep is all you need to make this Amazing Slow Cooker Beef Stroganoff! Combine ingredients in your slow cooker, come back in 4 hours to thick, rich, creamy mushroom sauce and tender beef, slowly marinated and delicately seasoned to perfection!
Honestly, Beef Stroganoff is one of my favorite dishes. That being said, I’ve tried many different recipes and finally came up with my own version by combining what I liked about each one. It’s mostly based on a recipe given to me years ago by a Hungarian friend of mine, thus the Paprika. I hope you enjoy it as much as my family does!

Beef
Mushrooms
Sweet Onions
Sour Cream
Soy Sauce, Ketchup, Paprika, Salt & Pepper

I use stew beef for this recipe, if you have an Aldi near you, I highly recommend their stew beef. It’s not fatty or gristly like some stew meat can be. However, any cut of beef will become tender when it’s cooked in the slow cooker aka crock pot. Something to keep in mind… inexpensive cuts are made for the crock pot! Really, slow cooking breaks down the fibers in the meat and the result is tender, delicious meat every time! Just let the slow cooker (Paid Ad) do its magic!
Mushrooms
Canned mushrooms are best for this recipe. First of all, they are easy! Second, they’re easy… sorry I’m repeating myself but that is pretty important!
Another reason, they hold their shape… let me explain. Fresh mushrooms cooked in the slow cooker will drastically reduce in size after a few hours. However, canned mushrooms will still resemble mushrooms after hours of cooking. For this reason, they’re my go-to in slow cooker recipes.
Sweet Onions
Vidalia onions are the best if you can get them, if not regular yellow onions will work.
Sour Cream
This is where Stroganoff gets its delicious, creamy base. If you’re like me and you try to cut back on calories and the fattening stuff whenever you can… use reduced fat sour cream. I almost always substitute reduced fat for full fat, especially in things like dips.
Soy Sauce
Not every Stroganoff recipe calls for soy sauce but I think it really adds lots of flavor so if you’re skeptical please give it a try! By the way, Bragg’s Liquid Aminos Soy Alternative is my favorite “soy sauce” I started using it because it’s gluten free but now I prefer it. If you need a gluten free soy sauce, I highly recommend it. You can find it (Paid Ad)
Amazing Slow Cooker Beef Stroganoff
Equipment
- Slow Cooker/Crock-pot
Ingredients
- 1.5 lbs. Stew Beef, cubed
- 1 cup Onion, sliced
- 8 oz. Mushrooms, canned, sliced
- 1 tbsp Butter
- 3 tbsp Soy Sauce
- 4 tbsp Ketchup
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1 Tbsp Paprika
Thickening Ingredients
- 1 tbsp Cornstarch
- 3 tbsp Water
- 2 cups Sour Cream
Pasta
- 12 oz Egg Noodles
Instructions
- Combine all ingredients in slow cooker except for thickening ingredients and egg noodles.
- Mix well and cook on low setting for 6-8 hours or 4 hours on high setting.
- This is a good time to start your egg noodles.
Thickening Instructions
- Once the beef mixture has cooked for 4-8 hours (depending on which temperature setting you used) mix cornstarch and cold water in a cup until smooth.Stir into beef mixture.When you notice the beef mixture thickening after a few minutes stir in sour cream.
- Heat until hot but don't allow to boil.
Serving Suggestions
- Serve over hot egg noodles or combine everything. Enjoy!
