Easy Crock-Pot Pepper Beef

An incredibly easy crock-pot meal with an Asian flare. I put it together in the morning (literally takes 5 minutes) and come home to a delicious dinner. Serve this incredible pepper beef over a bed of rice, which you can buy in microwaveable bags if you’re really short on time; a box of minute rice is also good to keep in the pantry for those times when you need to eat and run. If you’re looking for something really quick and good – this delivers!

Jasmine Rice

For starters, you’re going to put your pepper beef ingredients in the crock-pot earlier in the day, let them cook and then serve over a bed of delicious rice. I like to use Jasmine rice, if you’ve never had it…you have to try it! It’s sooo good, it has a slight buttered popcorn taste and it smells amazing when it’s cooking! It only takes about 20 minutes so it’s not too bad. They sell it in all of the grocery stores where I live in Florida, but if you can’t find it locally you can get it here.

Beef

Stew beef is my go-to for this recipe. I’ve never been a fan of stew beef but when it simmers in the crock pot all day it gets really tender. Note: Slow cookers do an amazing job of tenderizing inexpensive (aka tough) cuts of beef. I really like Aldi’s stew beef (if you have one near you) it’s packaged in 1 to 2 pound packs which is perfect for most recipes, plus it’s good quality, it doesn’t have inedible, grisly, fatty pieces.

Green Peppers

These are the best in this recipe, I’ve tried other varieties but always come back to regular green bell peppers, the flavors are just perfect together.

Tomatoes

Diced boxed tomatoes are always my first choice in recipes but you can use canned as well. By the way, make sure that they don’t have any added ingredients such as garlic and basil as they will change the taste of your recipe. Plain diced tomatoes are best!

Soy Sauce

Lastly, soy sauce is crucial to this recipe. I prefer Bragg’s Liquid Aminos over soy sauce. It is a healthier alternative and it’s also gluten free if that’s important to you.

Easy Crock-Pot Pepper Beef

Serves 4. Hands on Time: 5 minutes, Cook Time: 6-8 hours

1 ½ – 2 Pounds Stew Beef (cubed)

2 large Green Bell Peppers

1 large onion

26 oz. diced Stewed Tomatoes

¼ cup Soy Sauce (I prefer this gluten free alternative.)

Instructions:

Chop the peppers & onions into 1 inch chunks.

Combine all ingredients in crockpot.

Cook on low for 6-8 hours.

Serve over a bed of rice.

I like to steam a bag of pre-washed, cut, broccoli to go alongside.
