Black Bean & Corn Salad

Black beans, corn, red bell peppers, tomatoes, green onions and cilantro make this black bean and corn salad the perfect accompaniment for your favorite Mexican dishes.

I love this simple, versatile salad for so many reasons…the main one being that it goes really well with Mexican dishes and we love Mexican food in our house! But it’s also great with fish or chicken for a light summer dinner.

Ingredients in Black Bean and Corn Salad:

Black Beans

I like to buy black beans in the can to keep things as simple as possible. Always make sure that you rinse beans really well and drain them thoroughly before using them in any recipe.

Corn

If you have fresh corn, it’s the best! But if you don’t, canned works well too (I usually use canned).

Green Onions

These are a staple in my house, I use them in everything! I like the fact that they’re much milder than a regular onion would be. Tip: The best (and easiest) way to slice them into rings is to use kitchen shears.

Bell Pepper

I like to use an orange bell pepper if I can find one. Not only are they delicious but the color variation is more visually appealing.

Optional:

Tomatoes

Fresh diced tomatoes are optional in this salad. I love tomatoes so I usually add them but it’s good either way. If you’re making your salad ahead of time (the day before) wait and add the tomatoes just before serving. Grape tomatoes are my first choice, they’re consistently delicious, always ripe and very tasty. (I slice them in half so that they blend better.)

Cilantro

This is another optional add-in. Personally, I love cilantro, but I know everyone does not! People either love it or hate it! For this reason, if I’m serving this to a group and I’m not sure of their preferences, I leave it out.

Black Bean & Corn Salad

Serves 6. Total Time: 10 minutes

16 oz. can Black Beans

16 oz. can Corn (or 1 ½ cups, fresh)

1/3 cup Green Onions, sliced

1 Bell Pepper, diced (Orange or Red)

1 cup Tomato, diced

1/4 cup Cilantro, chopped

½ tsp. Salt, ¼ tsp. Pepper (or to taste)

1 Tbsp. Lime Juice

Instructions:

Combine all ingredients in a large bowl.

Season with salt, pepper and lime juice to taste.
