Fajitas

Sizzling beef or chicken, bright, colorful peppers and onions, packed with flavor, wrapped in a tortilla blanket nestled between cheese, sour cream and salsa…do I have your attention? And yet, so easy to make! I love recipes that are packed with flavor with minimal effort required… this is one of them. And if you have leftovers, they’re even tastier the next day.

Beef

You can usually find pre-packed beef already sliced up for fajitas. It can be good…sometimes it’s tough, you’ll have to use your judgment. I’ve had good results with top sirloin or even strip steaks which I try to get when they’re on sale. I find that cuts like flank or flatiron can be tougher than what I like.

Easier slicing – If you put the meat in the freezer for about an hour it will firm up and be easier to slice nice and thin.

Fajitas

Serves 4 – Makes about 10 Fajitas

1-11/2 pounds Beef or Chicken, sliced thin

4 cloves Garlic minced

1 tsp. Sea Salt

1 tsp. Oregano

2 tsp. Cumin

2 tbsp. Olive Oil

2 large Bell Peppers (combination of red, yellow and orange is best)

1 large Onion

10 Fajita Size Tortillas

2 cups shredded Cheese (Cheddar, Monterey Jack or Mexican Blend)

Sour Cream

Black Beans

Instructions:

Slice meat into thin strips. Mix the garlic, salt, oregano, cumin and olive oil in a dish. Add meat and mix well. You can let this marinate for a few hours if you have the time but it’s not necessary.

 Slice the peppers and onions into strips about ½ inch thick so that they stay crisp-tender.

Heat a large skillet to medium-high heat. Add meat and brown lightly while stirring constantly. Once the meat is cooked (this only takes a few minutes) add the peppers and onions.

Cook while stirring constantly just until the peppers and onions are crisp-tender, you don’t want them limp and soggy (I take one out and try it). When they’re cooked to your liking take them off the heat so that they don’t overcook.

Serve on tortillas with shredded cheese, salsa and sour cream. I like to mix in a can of black beans before serving.
