This is the easiest, foolproof mashed potato recipe you will ever make, guaranteed! No peeling, chopping, draining, transferring to another dish, etc. Best of all, they’re absolutely perfect, every time!

Mashed potatoes have always been one of those things that I would have someone else bring, you know, when they ask you, “what can I bring?” I would always say, “Mashed Potatoes, please!” Even for an experienced cook they can be kind of intimidating. Not only that, they’re time consuming and if you’re hosting a big dinner like Thanksgiving or Christmas you need to either make them ahead of time or last minute and try to keep them warm, ugh!

Until now… friends, I have found an easier way! I’m soooo excited to share the simplicity of this recipe with you! As always, if I can find an easier way to do something, I’m all over it!

The Method Behind Never Fail Perfect Mashed Potatoes…

I’ve been looking for an easier way to do mashed potatoes for a while now. If you’ve followed my recipes you already know that I love my slow-cooker. For that reason, I decided why not try it for mashed potatoes? The potatoes are cooked, mashed and kept warm until you’re ready to enjoy them all in the simplicity of your slow-cooker!

Step 1.) Clean

Scrub potatoes, no need to peel. However, if you prefer them without skin, remove the skin AFTER they cook. It pulls right off super easy! Personally, I think they have more flavor with the skin left on. 😉

Step 2.) Oil

Rub coconut oil all over the outside of potatoes.

Step 3.) Cook

Place potatoes in slow-cooker. Cook on high setting for 3-4 hours or until potatoes are tender.

Step 4.) Mash

Use a potato masher to mash potatoes (inside of slow-cooker) to desired consistency.

Step 5.) Dress

Add butter, sour cream and milk. Use masher to incorporate.

Step 6.) Whip

Optional- If you’re going for a really smooth consistency you can use a hand mixer right inside of the slow-cooker to mix them into a buttery, smooth finish.

Russet potatoes

Coconut Oil

Butter

Sour Cream

Milk

Salt & Pepper

Slow Cooker

Hand Mixer (paid ad)

The easiest mashed potatoes you will ever make! No peeling, chopping, draining or drying out following this simple one-pot process.
Prep Time 10 minutes
Cook Time 3 hours
Total Time 3 hours 10 minutes

Ingredients
  

  • 4 Large Russet Potatoes
  • 2 tbsp butter
  • 1/2 cup sour cream
  • 1/4-1/2 cup milk
  • 1/2 tsp salt

Instructions
 

  • Scrub potatoes and dry with paper towels.
  • Rub outside of potatoes with coconut oil. (leave skin on potatoes)
  • Place potatoes inside of slow-cooker and set on high setting.
  • Cook for 3-4 hours until potatoes are soft when a knife is inserted.
  • If you prefer your potatoes without skin this is the time to peel them. Use tongs to hold onto hot potatoes, the skin will pull off easily. (I leave the skin on.)
  • Using a potato masher, mash the potatoes inside of the slow-cooker.
  • Add butter and incorporate into the hot potatoes using the masher.
  • Stir in sour cream and salt.
  • Add milk to achieve desired consistency. Usually about 1/2 cup is perfect but it will vary depending on the size of potatoes you use. Stir well.
  • Lower a hand mixer into the slow cooker to mix thoroughly.
  • Keep potatoes warm on low setting until ready to serve.
