This is a regular on our menu; it’s so simple and very tasty! I also find it to be kid friendly… maybe because it’s a variation of pizza? So, if you have picky little eaters in your house give it a try! I even used to send an extra helping to school in my son’s lunch for his friend who loved it!
Gluten Free Pizza Crust Idea: Popular Mexican Rice Pizza
Here’s another plus, because you’re using rice as a crust, it’s gluten free! Always be sure to check the ingredients on your package just to be safe. I prefer the Vigo Yellow Rice brand; the taste is bolder than some of the others. On that note, if you want to make it even tastier use chicken broth in place of water when cooking the rice. This makes such a difference!
Toppings
Add your favorite toppings as you would on a regular pizza. This is a great place to get the kids involved! Let them grate cheese, chop toppings and decorate the pizza as they wish while you enjoy a glass of wine!

Lastly, the type of meat you use will make a dramatic difference! For example, diced chicken is very good, it’s mild flavor blends with the other toppings well. However, if you’re looking for a spicier, bolder taste, you’ll want to use bacon or sausage. Especially sausage, preferably beef summer sausage… it’s so good! Not the healthiest choice but it doesn’t need much, a half cup diced small is fine.

Most of my recipes are more Tex-Mex than Mexican. I really like the combination of American and Mexican food. In a lot of Mexican recipes, you’ll find green sauces, mole and queso type cheeses, whereas with Tex-Mex we use red sauces and cheddar and jack cheeses, which are typically easier to find in grocery stores. In addition, you’ll notice that cumin is a staple.

Favorite Mexican Rice Pizza
Ingredients
- 16 oz. package of Yellow Saffron Rice I like Vigo brand
- 1 cup Tomato Sauce
- 2 cups shredded Medium Cheddar Cheese
- Bacon Bits, Diced Chicken, Pepperoni or Summer Sausage
- Green Onions sliced
- Black Olives sliced
Instructions
- Cook rice according to directions on package. (I like to use chicken broth in place of water)
- Grease the bottom and sides of a 10.5 x 15" cookie sheet. Spread the rice out evenly to form a crust. I pack it down firmly using an oiled spatula or a plastic sandwich bag over each hand.
- Spread the sauce over your “crust.” Add toppings, finishing with cheese last.
- Bake at 350 degrees F for 20 minutes or until cheese is melted.
