5 Minute Chicken Burrito Filling

Okay, so this is a slow cooker (crock-pot) meal. Never underestimate the humble crock-pot!

This is great to throw together when you know you’ll be out for a few hours and you’ll be coming home hungry…ready to see that food magically appear the moment you walk in the door!

I like to prep the toppings in advance too, just so everything is ready to go.

Burrito Station

When you’re ready to eat all you have to do is assemble your burritos with your favorite toppings. I like to change it up a bit, sometimes we add avocados, corn, fresh cilantro, sour cream, black olives or even hot peppers; depending on what we have in the house.

I also love the fact that everyone can make their own! Set up your own little “Chipotle” station, a platter with dividers works good to keep things separate. Great when the kids have friends over… because we all know how picky kids can be! And in case you need to stretch the recipe you can always add another can of black beans.

Chicken Burrito Filling

Serves 4-6, Total Time: 3 hours, Prep Time: 10 minutes

2 Chicken Breasts, boneless and skinless

3 tbsp. Taco Seasoning (if you need a recipe click this link)

1 cup Salsa

16 oz. can Black Beans (added at the end)

Mix taco seasoning and salsa in crock-pot. Add chicken.

Cook on high for 2 ½ – 3 hours.

Chicken is done when you can pull it apart with a fork. Rinse and drain black beans and stir in.

Makes enough filling for six large burrito tortillas.

Top with lettuce, tomatoes, cheese, corn, salsa, sour cream, etc.
